Slow-Roasted Pork Shoulder

A bone-in pork butt roasted low and slow until it pulls apart, with crisp bark on the outside. Feeds a crowd or a week of lunches.

Method

  1. Salt the shoulder generously on all sides. Refrigerate uncovered overnight if possible.
  2. Heat the oven to 275°F (135°C). Set the pork fat side up in a roasting pan.
  3. Roast for 6 to 7 hours, until the internal temperature reaches 195 to 203°F (90 to 95°C) and the bone wiggles free.
  4. Rest loosely covered for 30 minutes.
  5. Pull the meat into chunks with two forks, discarding the bone. Toss with the pan drippings.
