Carnivore Chaffles (Egg and Cheese Waffles)

Two-ingredient waffles made from egg and cheese in a waffle iron. Crisp outside, tender inside, and sturdy enough to use as a sandwich 'bun'.

Method

  1. Preheat a mini or standard waffle iron and brush it lightly with butter.
  2. Whisk the eggs and salt, then stir in the cheese.
  3. For a mini iron, spoon in about 1/4 cup of batter. Sprinkle a little extra cheese on the iron first for a lacy, extra-crisp shell.
  4. Close and cook 3 to 5 minutes, until steam slows and the chaffle is golden. Opening too early splits it.
  5. Cool on a rack for a minute to crisp. Repeat with the rest of the batter to make about 8 mini chaffles.
