Method

  1. Pat the chops dry and salt them all over. Let sit 20 minutes if you have time.
  2. Heat a large cast-iron skillet over medium-high heat and add the fat.
  3. Using tongs, stand the chops on their fat edge and render for 2 to 3 minutes until crisp.
  4. Lay them flat and sear 3 to 4 minutes per side.
  5. Cook to 145°F (63°C) and rest 3 minutes, the USDA minimum for lamb chops. Pull a few degrees earlier if you like them pinker.
