Slow-Roasted Lamb Shoulder

Method

  1. Salt the lamb all over and let it sit at room temperature for 1 hour, or refrigerate overnight.
  2. Heat the oven to 325°F (165°C). Place the lamb in a roasting pan and pour the water around it.
  3. Cover tightly with foil or a lid. Roast for 3.5 hours.
  4. Uncover, raise the heat to 425°F (220°C), and roast another 20 to 30 minutes until well browned.
  5. Rest 15 minutes. Pull the meat from the bone and spoon the pan juices over it.
