Pan-Seared Strip Steak in Tallow

A fast weeknight steak: New York strips seared in beef tallow and basted with the hot fat. Fifteen minutes start to finish.

Method

  1. Pat the steaks very dry with paper towels and salt both sides. Let them sit at room temperature for 20 to 30 minutes if you have time.
  2. Heat a heavy skillet over medium-high heat for 3 to 4 minutes. Add the tallow and let it shimmer.
  3. Lay the steaks away from you into the pan. Cook 3 to 4 minutes without moving them, until a dark crust forms.
  4. Flip. Tilt the pan so the tallow pools and spoon it continuously over the steaks for 2 to 4 minutes.
  5. Pull at 130°F for medium-rare or 145°F to meet the USDA minimum for whole beef cuts, then rest 3 to 5 minutes.
  6. Slice and spoon the pan tallow over the top.
